Chia Pudding with Stewed Pears

HACOCO | An indulgent, high-fiber twist on a classic chia pudding made with Yaygit Hacoco Nut Butter.

Ingredients:

4 Tbsp of Yaygit Organic Hacoco Nut Butter

2 ripe pears, diced and peeled (Note: For extra fiber, leave skin on pears and add 1/2 cup fresh raspberries.)

1 1/2 cup soy milk (or alternate milk of your choice)

1/2 cup chia seeds 

1/2 cup desiccated coconut 

1/2 tsp raw maple syrup

1/2 cup water 

Directions:
  1. Preheat the oven to 375 °F.

  2. In a small bowl, combine together desiccated coconut and maple. Mix well, and bake in oven for 5-7mins till lightly brown*. Remove from oven when ready. (*Note: Don't take your eyes off them, or they might burn.)

  3. Place diced pears (and raspberries, if desired) in a pot with  water and simmer on low heat until soft and reduced/boiled down. Set aside.

  4. Combine chia and alternative milk with 2 Tablespoons of Yaygit Organic Hacoco Nut Butter. Stir until chia is coated with liquid. Let stand for 5 minutes while stirring occasionally. (Note: Take your time, be mindful, and put some good energy into your stir. You're nourishing your body with love and intention.)

  5. Divide chia mix equally between two glass bowls, top with stewed pears, cover with toasted coconut, and drizzle each bowl with 1 Tbsp of Yaygit Organic Hacoco Nut Butter. Enjoy!
